Punch into google 'breakfast most important meal of the day' and you will get more than two and a half million hits. Why is it then, that you can pay upwards of fifteen dollars and get something that your dog/child could have created in the backyard. What constitutes a good start to the day? Looking at both it's nutritional value and it's value for money. Let's keep things simple.
Two organic eggs poached, preferably without one years worth of flu vaccine and other anti-biotic leftovers. I would like that on a piece of sourdough bread, again organic would be nice and half an avo thanks you very much.
Let's break that down. If you're paying retail for a half dozen organic eggs, you're paying around $3.60 or $1.20 for two. A loaf of organic sourdough from Sol in Newstead (they deliver EVERYWHERE) $4.50. Ten serves in a loaf (either one generous piece or a couple of smaller ones) 45c. Today avocados are $1 at coles next week they're $3, so for arguments sake let's go with $2. So add to our total $1 for half an avo.

Multiply food cost by three times ( a 33% food cost) to cover labour and other expenses. 2.65 x 3 = $7.95. This remaining profitable part should keep Mr Cafe and bank happy. So as long as you don't drown my poached eggs in vinegar or serve me a rotten avocado I will be happy to pay $7.95 for a very basic and not too labour intensive breakfast.
If I'm happy I will be back and I will bring friends and they may shout your praise from the rooftop because breakfast is the most important meal of the day.
